Macaroni Cheese Cream with Tomatoes (Recipe)

  • 450 g (1 lb) macaroni shells
  • 3 tablespoons vegetable oil
  • 4 green onions, coarsely chopped
  • 1 / 4 teaspoon salt
  • 1 / 4 cup all-purpose flour
  • 4 cups hot milk, low fat (1%)
  • 2 tablespoons Dijon mustard
  • 2 cups cheddar cheese, grated, low fat
  • 1 cup Monterey Jack cheese, grated low-fat
  • 1 / 2 cup grated Parmesan cheese
  • 1 medium carrot, peeled and coarsely grated
  • 2 tomatoes, seeded and sliced
  • 1 cup fresh whole wheat breadcrumbs
